“It couldn’t be ANY EASIER, just mix together sausage, bisquick and cheese – it is that simple – the simplest dish in the world”, my friend said. “You are a GREAT cook, certainly it won’t be any trouble for you”. (I wish you could hear my eyes rolling in my head right now).

And that is how the Great EASY Sausage Balls Fiasco started.

It really isn’t hard, BUT there are a few things you need to know. Not really as simple as mix it together and bake.

Certainly took me a try or two. I’ll try to save you that headache!

Here’s What You’ll Need

  • Sausage
  • Bisquick
  • Cream Cheese
  • Spices

Here’s How You Do It

  1. Mix ingredients together.
  2. Form into balls
  3. Bake
  4. EAT!

Special Equipment

You won’t need any special equipment for this recipe, but it does help to have good scoop. I have these and use them a lot. Makes scooping out the same size sausage balls much easier!

Tips and Tricks

  • You CAN use a mixer to beat these together, but I like to use my hands, it’s just as easy.
  • The cream cheese makes these sausage balls slightly moist
  • The smaller balls tend to hold their shape best when baking.
  • These sausage balls will flatten a bit as they bake, no worries, they remain delicious!
  • You will note grease on the baking sheet – just don’t look – better out than in as I like to say.
  • There is a REAL danger in eating WAY too many of these, causes a belly ache. Ask Sarah, she will tell you.
  • These are great the next morning crumbled up in your grits. Just saying.

What Is Good With Sausage Balls?

Substitutions

Bisquick – You can NOT substitute plain flour for the biscquick, makes it yucky. That said, off brand is fine. Aldi makes a great substitute for Bisquick, it’s called Baking Mix.

Cream Cheese – Feel free to go with the lower fat versions or Neufchatel

Cheddar Cheese – Want to add some flavor? Try a Pepper Jack. You can also try some Provolone or any other cheese that melts good.

Spices – We love onion and garlic around here but feel free to try some of the following Cayenne, paprika, everything bagel, a sprinkle of hot sauce, yellow mustard or a dash of fish sauce.

Sausage – We recommend using breakfast sausage BUT you can also use Italian Sausage, venison sausage or any spiced ground meat you prefer. I assume turkey and chicken sausages would work too!

Can I Freeze Sausage Balls?

Yes! Absolutely! You can freeze them once they are baked. Freezing them before baking compromises the cream cheese and then they don’t hold together quite as well.

How Long Do Sausage Balls Last?

They will disappear as soon as you put them on the counter. However, you can keep them covered once they cool down in the fridge for up to 5 days. Reheat in the toaster oven, oven or microwave.

  • 2 Cups sharp cheddar cheese
  • 1 lb sausage – uncooked – hot or mild your choice.
  • 2 Cups biscuit mix
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 4 oz cream cheese softened to room temp
  • Preheat the oven to 375. Prepare 2 baking sheets with parchment paper or aluminum foil. Shred the cheese if not already shredded and mix all ingredients together in a medium sized bowl using your hands. Form into 1 inch – golf ball sized balls.

  • Makes 6 dozen 1 inch balls. Makes 2 dozen golf ball sized balls. If you go for the golf ball size balls, you will note that they squash down a little on the bottom side.

  • Bake for 15-25 minutes for 1 inch balls, 20-30 minutes for golf ball sized balls.

  • Remove from the oven, allow the baking sheet to cool for a minute or two and then remove the sausage balls to a baking rack to cool completely. OK, go ahead, pop one in your mouth – but be careful- they might still be hot!

  • Perfect for freezing.
